At its peak, the lotus root cultivation area in Baoying reached around 250,000 mu, with the combined annual output value of planting, processing, and leisure tourism industries exceeding 4 billion yuan. Moreover, Baoying has successfully established the first national modern agricultural industrial park (for lotus roots) in Yangzhou.
As early as the Sui and Tang Dynasties, China had the tradition of planting and consuming lotus roots.The renowned Chinese pharmacologist Li Shizhen praised the lotus root in his work "Compendium of Materia Medica": "It can be eaten all year round, bringing joy to the heart; it can truly be called a spiritual root."
Processed products of Baoying lotus roots are exported to countries and regions including Japan, South Korea, Southeast Asia, Europe, and America. Baoying contributes 70% of China's lotus root export, with its market share in Japan and South Korea reaching 70%.
